I use clay pot to cook this dish. I am glad you publish this recipe. I like egg plants. I have been referencing this recipe from time to time. I dip the egg plants to vinegar water right after cutting them. This helps to maintain the nice purple colour when the egg plants are done.

回覆刪除如果要紫色茄子 you could put them in salt water or in water with vineger (a little bit vinegar will do)
